Prep Time: 10 min. Cook time: 1 hour Total Time: 1 hr. 10 min.

Ingredients

  • 5 cups of fresh berries (use blueberries, blackberries, raspberries, and/or strawberries; you choose your combination).  If using strawberries, slice them up to make them the same size as the other berries.
  • 1 lemon zested and juiced
  • 2 tsps cornstarch
  • ½ tsp. vanilla extract
  • 1/3 cup white sugar

Topping

  • 2 cups all-purpose flour
  • ¼ cup powdered sugar
  • ¼ cup brown sugar
  • 1 TB baking powder
  • ½ cup cold butter diced
  • 1 cup half and half

Directions

  1. Preheat oven to 350 °.  Spray a 9” x 13” pan with nonstick cooking spray.
  2. In a medium-sized mixing bowl, toss the berries with lemon zest and juice, cornstarch, vanilla, and white sugar.  Spread them out in the pan.
  3. In a large mixing bowl, stir together the flour, powdered sugar, baking powder, and salt.  Use a pastry cutter to cut in the butter until it resembles a course meal.  You can also put it in a food processor and pulse it.
  4. Pour half and half into the flour mixture.  Stir to form a thick batter.
  5. Scoop the batter on top of the berries in large clumps to form a nice cobbler crust.
  6. Bake in the preheated oven for 1 hour.

Note:  Serve your guests with a scoop of vanilla ice cream.

Lots of fruit here, so here is a verse about fruit. You often hear the statement, “You will know them by their fruit,” but what does it mean?

As we all know, a healthy tree bears good fruit, but if it is diseased, you’ll never get good fruit. Jesus warns us about those who pretend to be Christians. Their actions, words, and the “fruit” of their lives prove what was inside their hearts.  Christians will not continue a lifestyle of bearing bad fruit.  If they have been transformed, then we will see the good fruit in their lives.

“Beware of false prophets, who come to you in sheep’s clothing but inwardly are ravenous wolves. You will recognize them by their fruits. Are grapes gathered from thorn bushes, or figs from thistles? So, every healthy tree bears good fruit, but the diseased tree bears bad fruit. A healthy tree cannot bear bad fruit, nor can a diseased tree bear good fruit. Every tree that does not bear good fruit is cut down and thrown into the fire.  Thus you will recognize them by their fruits.”  Matthew 7:15-20
