Healthy Romaine with Oranges and Olives Salad Recipe

Prep Time: 10 mins. Cook time:  10 mins. Total Time:  20 min. Servings:  8-10 small portions

Ingredients

  • 2 heads Romaine lettuce, torn into bite-sized pieces
  • 1 bunch of arugula or mixed greens with arugula
  • 1 can of mandarin oranges (or you can cut up oranges)
  • ½ cup pitted kalamata olives
  • ½ red onion, thinly sliced
  • Chopped walnuts (or your favorite nut)

Directions

  1. In a large bowl, add the Romaine lettuce, arugula greens, olives, and red onion. Toss until well combined.
  2. Arrange the mandarin oranges on top (otherwise they’ll drop to the bottom like my photo).
  3. Garnish with chopped nuts. 
  4. Top with your favorite salad dressing.

Try a Citrusy Dressing: Combine 1/3 cup olive oil, ¼ cup orange juice, 1 tsp white wine vinegar, and salt and pepper to taste.
